The Blackberry Wonder #WeeklyWonder
Save room after dinner for this float, which serves as a dessert and cocktail in one. Homemade blackberry syrup is extremely easy to make, and its vibrant hue turns beautifully pink when mixed with club soda. Pour gin or vodka—Mum’s choice—and the blackberry soda over a scoop of vanilla ice cream, and garnish with rosemary.
- 2 cups Blackberries
- 1/2 cup Sugar
- 1/4 cup Water
- 4 cups Club Soda
- Vanilla Ice Cream
- Gin (or vanilla vodka)
- Rosemary and extra blackberries, for garnish
- In a large saucepan, bring berries, sugar and water to a boil, stirring occasionally. Let cook for 10-15 minutes until juices are released. Press through a fine mesh sieve into a bowl and let cool completely.
- Mix the blackberry syrup with the club soda.
- Place one scoop of vanilla ice cream into a glass. Pour liquor of choice overtop of your ice cream, top with blackberry soda and garnish with rosemary and an additional berry!
