1 Tbsp blackberry jam
1 tsp sugar
5 lemon balm leaves
1 tsp honey
In a cocktail shaker, muddle the lemon balm leaves, jam and sugar until the leaves bruise and the sugar combines well. Add ice, gin and honey to the shaker and shake vigorously until well-chilled. Pour the mixture into a glass and top with soda water. Garnish with additional lemon balm leaves to serve.
