Aster’s Executive Chef Helena Puolakka hails from the south-west coast of Finland, which has shaped her style of cooking, focusing on uncomplicated, homemade food and natural distinctive flavours.
Helena’s Nordic background also instilled in her a sense of location and an expression of this through food. Her French culinary training adds a completely different dimension to dishes, introducing exquisite technique and breadth of knowledge. She sums up her style of cooking as Nordic/French, and this combination is evident in every dish offered at Aster.
The Wonder List had the pleasure of tasting some of Helena’s famous dishes and we were blown away at the simplicity of the ingredients. Every element was delicious but it’s not simply Nordic, the menu is diverse and well thought out.
We would recommend the venison carpaccio, shaved chestnuts, pickled shimeji and the stunning warm smoked Arctic char, Greenland prawns and cucumber. Arctic char is a cold-water fish in the family Salmonidae, native to alpine lakes and arctic and subarctic coastal waters. Arctic char has a delicate texture and clean, mild flavour. We loved it!
